1.- THE STEVIA

The Stevia is a plant of sweet leaves, native of the South American flora, which are cultivated in tropical or warm weathers of the mountainous slopes of the Amazonic Basin, Peru and Paraguay. The Stevia is increasing its rename after have been tested conscientiously the absence of toxicity for which, in the main part of the world, it’s considerate totally safe for the human consumption. At present, The Stevia is commercialized as the product Rebiana by an American corporation Cargill, by means of its partner Coca Cola to market it in many countries and be able to win the approval of regulation in USA.
The edulcorant (Stevioside) which is extracted from it is 300 times sweeter than sugar, the tender leaves have a pleasant flavor of licorice and it can be used to replace the refined sugar. In fact, the leaves contain glycosides of sweet flavor but they are not metabolizable and a few, contain calories. The main part of the glycosides consist in molecules of Stevioside. The dry leaves are between 20 and 35 times sweeter than sugar. The natural sugar, without being refined, contain more than 100 elements and identifying volatile oils.

 

A)  COMPOSITION:
Through many analysis of laboratory practiced in the Stevia, remains demonstrated that this marvelous plant is extraordinarily rich in: iron, manganese and cobalt.

The crystals in state of purity are melt in 238º C.
It maintains its stable flavor at high and low temperatures.

2.- PROPERTIES OF THE STEVIA MELITUS

 

The principal property of the Stevia leaves is to serve as an edulcorant, replacing the sugar.
